Farmers Notes: The raw organic green coffee beans are all hand sorted to remove any defective coffee's and foreign material. Colombia is the second-largest producer of coffee in the world and the largest producer of washed and Arabica coffees. It's well known for the high quality of its coffee, and about half of its exports come to the United States.
Tolima is the third largest coffee producing region of Colombia and accounts for 12% of the country's annual production. Located in west-central Colombia, this region is fully inscribed by the Andean mountains and the Magdalena river basin, making it rather remote. Hugging the western slopes of the Andes mountains, north of the Huila district, Tolima boasts snow covered peaks, deep river valleys, and all terrain in between. Coffee trees of varieties Caturra, Castillo and Colombia, love the high hills while rice, sesame and sorghum claim the lower regions. The high altitudes (1,700 – 2,000 masl) and rich soil have made the coffees from the Tolima region some of the best and highest awarded coffees in Colombia and around the world. Transportation in this part of Colombia can be challenging with roads often minimal at best. Also, as one of the last areas of conflict between the government and the FARC guerillas, farmers of the Tolima district have overcome much difficulty as they seek to improve their coffees and their way of life.
"Excelso" is a grading term for exportable coffee from Colombia, not related to variety or cupping profile. Excelso beans are large, just slightly smaller than Supremo.
